Don’t panic if the browned bits of food on the bottom of the pan (a.k.a. fond) are browning too quickly (seconds away from burning). Just turn the heat down a little and deglaze the bottom of the pan! Add a splash of water and then scrape up the browned bits with a wooden spoon. Then continue cooking.
