Baked Western Sandwich

If you grew up in my house, I can guarantee you were eating Western Sandwiches as a kid. It’s an egg sandwich that my dad loved to make when he was on breakfast duty.  A Western Sandwich, sometimes called a Denver, is a bell pepper, ham, onion, and fried egg sandwich.

 

If you only have a couple sandwiches to make, cook your Westerns in a frying pan on the stove. But when I need to make a bunch of breakfast sandwiches all at once, I love making Western’s in the oven.

 

Making baked Western Sandwiches is simple: sauté the filling, spread the filling evenly in a greased baking dish, cover with whisked egg, season evenly, bake until just cooked, and, finally, simply slice and serve between 2 slices of buttered toast. It’s very similar to how to cook a frittata.

Baked Western Sandwich

Yield: Makes 8 small sandwiches or 4 large sandwiches

Baked Western Sandwich

Ingredients

1 tablespoon butter
1 medium onion, minced
½ large red bell pepper, minced
¾ cup diced cooked ham (about 150 g)
8 eggs
2 tablespoons water, milk, or cream
¼ teaspoon salt
¼ teaspoon pepper
8 to 16 slices bread, toasted and buttered

Instructions

  1. Adjust oven rack to middle position. Preheat oven to 350°F. Grease a 9 x 13 baking dish (or line with parchment paper).
  2. Melt butter in a large nonstick frying pan over medium-low heat. Add onion and red pepper; cook stirring often until red pepper has softened, about 7 minutes. Add ham, cook and stir for 3 minutes.
  3. Meanwhile, whisk eggs with milk; set aside.
  4. Spread onion mixture in an even layer in greased baking dish. Pour over whisked eggs. Season evenly with salt and pepper. Bake until the middle has just set, about 10 to 15 minutes.
  5. Slice and serve between sliced of toasted and buttered bread.

Baked Western Sandwich Tips:

  • The Western is done baking when the centre of the egg mixture is just cooked.  To tell, just feel the centre, if it’s not wet, it’s cooked.
  • Cooked ham can be substituted with cooked bacon or kielbasa.
  • To dress up your Western Sandwiches, add a slice of cheese and seasoned sliced tomato.
  • Start toasting the bread while the Western cooks in the oven.
