Goat Cheese and Basil Mashed Potatoes

Goat Cheese & Basil Mashed Potatoes

Goat Cheese & Basil Mashed Potatoes

Ingredients

3 medium russet potatoes (1½ pounds), peeled, cut into 1-inch chunks
salt
3 tablespoons butter
½ cup milk
1 package (130 g) goat cheese (about ½ cup)
¼ cup torn fresh basil

Instructions

  1. Place potatoes and 1 tablespoon salt in a large pot of cold water. Bring to a boil over high heat and cook potatoes until fork-tender (about 15-20 minutes).
  2. Drain potatoes and return to pot. Place over still-hot burner.
  3. Add butter, milk, goat cheese, and ½ teaspoon salt and mash with a potato masher until smooth. Gently mash in the basil to bruise it and release some of its flavour.
