Grilled Portobello Mushroom Sandwich

This Portobello Mushroom Sandwich is amazing.  It’s tender, super delicious, and it takes no time to make.  Make sure to roll up your sleeves when you eat it – it’s super juicy!

Grilled Portobello Mushroom Sandwich

Ingredients

Large Portobello Mushrooms, 4
Bread Buns, 4
Boursin Cheese (Garlic and Herbs flavour), 4 Tablespoons
Red Onion, Thinly Sliced
Baby Arugula, 4 small handfuls
Olive Oil, 6 Tablespoons
Balsamic Vinagre, 2 Tablespoons
Dijon Mustard, 2 Teaspoons

Instructions

  1. Heat oven to broil. Heat grill pan over medium heat (or BBQ).
  2. In a medium bowl, whisk together 6 tablespoons olive oil, 2 tablespoons balsamic vinegar, and 2 teaspoons grainy Dijon. Season with salt and pepper.
  3. Remove stems from 4 large Portobello mushrooms. Brush both sides with vinaigrette, and place gill side down (stem side) on heated grill - grill for 3 to 5 minutes.
  4. Toss 4 small handfuls baby arugula with leftover vinaigrette. Set aside.
  5. Flip mushrooms. Top each mushroom with 1 tablespoon of garlic and herbs Boursin cheese - grill for 2 minutes. Transfer mushrooms to a plate.
  6. Broil 4 sliced buns on a baking sheet until buns are lightly toasted – this will take seconds.
  7. Place grilled mushrooms on toasted bun bottoms; top arugula salad,thin slices of red onion and tops of buns.

  • The longer Portobello mushrooms cook, the tougher they become – so grill them until JUST cooked.

    Love the show. Just watched an episode where you made Vegetarian Burgers. They look delicious but I cannot find your recipe on this web site. basically you put mushrooms in a blender then mixed them with something I never heard of, put it in the fridge for a while then cooked them on a skillet.
    Can you direct me?
