No-Bake Individual Strawberry Cheesecakes

No Bake Individual Strawberry Cheesecakes Take advantage of strawberry season with these yummy No-Bake Individual Strawberry Cheesecakes. They’re quick, simple, and tasty — not to mention perfect for entertaining since they get made a head time. And because these Strawberry Cheesecakes are no-bake, you and your house will stay cool!

 

The bottom layer of this no-bake dessert is crushed cookies – you can use graham craker cookies (a traditional crust in most cheesecake recipes), or you can get creative and use chocolate covered digestive cookies – YUM!

 

The cheesecake layer is plain cream cheese  mixed with honey and vanilla yogurt, for flavour and sweetness.  

 

The bright red top layer is macerated strawberries. “Macerating” is a process where food, usually fruit, is soaked in a flavourful liquid. Over time, the fruit soaks up the liquid and begins to soften. When strawberries are sprinkled with white sugar and left to sit, the sugar draws out the strawberries’ natural juices, creating a syrup which softens and sweetens the strawberries.

No Bake Individual Strawberry Cheesecakes

Serving Size: Makes 6 individual desserts

Ingredients

1 package (250g) cream cheese, softened
3/4 cup vanilla yogurt
1 teaspoon honey
18 graham cracker cookies, crushed (about 2 cups of crushed cookies)
454 g strawberries, hulled and chopped (about 2 cups)
2 tablespoons sugar

Instructions

  1. Whisk together cream cheese, yogurt and honey.
  2. Divide the graham cracker crumbs among 6 small jars (such as Mason jars) or cups; top with cream cheese mixture, about ¼ cup in each jar. Cover and refrigerate for 1 hour.
  3. Meanwhile, mix together strawberries and sugar. Set aside at room temperature until juicy, about 15 minutes.
  4. Divide the strawberries between the cheesecake jars and serve.

Tips for No-Bake Individual Strawberry Cheesecakes:

  • To soften cream cheese, cut larger blocks of cream cheese into smaller pieces and microwave for 10-15 seconds.
  • To crush graham cracker cookies, place cookies in a zip-lock bag and smash them with a small pot until the cookies resemble a coarse crumb.
