This Potato and Cheddar filling is a great option for my Nana’s Perogy Dough Recipe.

Potato and Cheddar Cheese and Perogy Filling

Ingredients

3 large russet potatoes, peeled and quartered
2 tablespoons butter (or bacon fat!!!!)
1 onion, chopped fine
2 cups shredded mild cheddar cheese

Instructions

  1. Fill a large pot with cold water, add potatoes, and bring to a boil; cook potatoes until fork tender. Drain and mash.
  2. Heat a small pan over medium heat. Add butter and onions. Cook until onion has softened.
  3. Add onion and shredded cheddar to mashed potatoes; mix well.
