Here is my recipe for Vegetarian Chili.  It’s basic, so you can have fun with it!  If you like a spicy chilli, then add your favourite kind of heat – jalapeño peppers, red chili flakes, hot sauce, etc.  If you want your chili to have a sweet finish, add a handful of frozen sweet corn just before it finishes cooking.  That’s the great thing about this recipe, you can really make it your own!

Vegetarian Chili

Ingredients

1 tablespoon olive oil
1 cup chopped onion (about 1 onion)
½ cup chopped celery (about 1 celery stalk)
½ cup chopped carrot (about 1 carrot)
1 green pepper, chopped
1 cloves garlic, finely chopped
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon oregano
1 can diced tomatoes
1 cup vegetable stock (or chicken, water, beer)
¼ cup bulgur
1 can (540 mL/19 fl oz) black beans, drained

Instructions

  1. Heat oil in Dutch oven over medium heat.
  2. Add onion, celery, carrot, green pepper, and a pinch of salt; cook and stir until vegetables began to soften.
  3. Add garlic, chili, cumin, and oregano; cook and stir until fragrant, about 1 minute.
  4. Add tomatoes, stock, and bulgur; bring to a boil, then lower heat to low and simmer until chilli has thickened, about 30-40 minutes, stirring occasionally.
  5. Add black beans; cook until beans have warmed through, about 5 minutes.
  6. Taste, season, and serve.

Bulgur is made from wheat and, in this recipe, sucks up the excess liquid to make the chilli thick, nutritious, and delicious!  Try it.
