PickFirm bulbs and crisp stalks.  Leaves (fronds) should be bright green and fresh looking.
StorageRefrigerate, unwashed, in an open plastic perforated bag or in the fridge for up to 1 week.
PrepareTrim stalks within 1-inch of the bulb, discard or save stalks for soup.  Trim leaves and save for garnishing.  Cut away base of bulb.  Bulb can be sliced, quartered, diced, or julienned.
