Fennel

 
Pick Firm bulbs and crisp stalks.  Leaves (fronds) should be bright green and fresh looking.
Storage Refrigerate, unwashed, in an open plastic perforated bag or in the fridge for up to 1 week.
Prepare Trim stalks within 1-inch of the bulb, discard or save stalks for soup.  Trim leaves and save for garnishing.  Cut away base of bulb.  Bulb can be sliced, quartered, diced, or julienned.
