Breakfast Casserole

2 tablespoons butter
1 medium onion, finely chopped
1 pkg (about 567g/3 ½ cups) shredded hash browns
1 pkg (8 oz/228 g) sliced mushrooms
1 pkg maple breakfast sausages (about 14 sausages), chopped ½ inch thick
8 eggs
1 ½ cups milk
¼ teaspoon pepper
1 cup cherry tomatoes, thinly sliced
2 cups grated old cheddar, grated
3 green onion, thinly sliced


  1. Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  2. Melt 1 tablespoon butter in a nonstick frying pan over medium-high heat. Add onion; cook, stirring often, until onion has softened, about 3 minutes. Add hash browns and ½ teaspoon salt. Cook, stirring often, until hash browns start to brown, about 5 minutes. Spread hash brown mixture evenly on the bottom of the greased baking dish.
  3. Return nonstick frying pan to medium-high heat. Add 1 tablespoon butter, mushrooms, and breakfast sausages. Cook and stir until sausage is cooked, about 4 minutes. Spread evenly over hash brown layer.
  4. In a bowl, whisk together eggs, milk, and pepper. Pour egg mixture over the layers in the baking dish. Sprinkle evenly with tomatoes, cheese, and green onion.
  5. Bake for 55 minutes. Remove form oven and allow to rest for 10 minutes before slicing and serving.

Hash Brown Breakfast Casserole Tips:

  • Shredded hash browns are usually found in the refrigerated (not frozen) section of the grocery store, usually in the deli isle. As a substitute you can use frozen hash browns, the potato is cubed rather than grated.
  • If you want to make this hash brown breakfast casserole ahead of time, allow the filling (hash browns, mushrooms, and sausage) to cool before pouring in the egg mixture.  Then sprinkle on the cheese, tomato, and green onion and cover and refrigerate.  When you’re ready to bake it, allow the casserole to sit at room temperature while the oven preheats.
  • Have fun with the ingredients.  You can use cooked bacon, or ham instead of the sausages;  finely chopped bell peppers for the tomato; or any type of cheese you want instead of cheddar.
