Keeping it Simple with Apples

Yesterday, Dina and I were at it again – having a blast in the kitchen and cooking up a storm keeping it simple with apples.

We made Smoked Gouda and Apple Grilled Cheese Sandwiches.  Have you tried adding sliced apple to a grilled cheese before?  It adds a slight sweetness, that goes oh so well with cheese.  Plus, sliced apple takes away the need for ketchup.  Did I dare say that?!?!

Apple and Smoked Gouda Grilled Cheese


8 slices of rustic bread
100 to 200 grams thinly sliced smoked gouda
1 apple, halved, cored and thinly sliced


  1. Heat a large non-stick frying pan over medium-low heat.
  2. Layer 4 slices of bread with cheese and apple. Top with remaining slices of bread.
  3. Spread both outside pieces of bread with butter.
  4. Working in batches, add sandwiches to frying pan and cook until crispy and golden, then flip.

Festive Fall Salad


4 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1 small shallot, minced
¼ teaspoon salt
4 handfuls of arugula
1 apple, cored, and thinly sliced
1 cup diced cooked turkey
¼ cup crumbled blue cheese
¼ cup dried cranberries
¼ cup pumpkin seeds


  1. In a large bowl whisk together olive oil, apple cider vinegar, Dijon mustard, shallot, and salt until thoroughly incorporated.
  2. Add arugula and toss. Add apple, turkey, blue cheese, cranberries, and pepita seeds and toss to combine. Season with salt and pepper to taste.
